Lime Panna Cotta

Coconut milk 400ml
Double cream 250ml
Caster Sugar 80g
Gelatine leaves 3 x 2g
Everyday Favourites vanilla pods 2
Caster sugar 300g
Limes (whole) 6
Water 200ml


  1. Combine the milk, cream, caster sugar and vanilla pods in a pan and bring to a simmer - remove from the heat and leave to infuse for 35 minutes
  2. Strain the mixture into a clean pan making sure all the vanilla seeds are scraped from the pods and return to the heat
  3. Soak the gelatine as per instructions and add the cream mix - once dissolved pour the mixture into your desired serving dish and chill for 4-6 hours
  4. To make the syrup, add the caster sugar, lime juice and water to a pan and boil until a syrup has formed then add the grated lime zest and chill
  5. Serve the panna cotta with the syrup and some fresh berries & mint
