Cranberry and polenta loaf

A delicious combination of tart cranberries with sweet polenta cake, finished with fresh orange – enjoy alongside a festive coffee.

    Everyday Favourites unsalted butter 250g
    Caster sugar 250g
    Everyday Favourites large fresh eggs 4
    Fine cornmeal 150g
    Everyday Favourites self-raising flour 200g
    Oranges, zest and juice
    Cranberries 180g
    Everyday Favourites ground cinnamon 0.5g
    Everyday Favourites vanilla pods 1


    1. Cream the butter and sugar together, then add the eggs and beat together
    2. Fold through the polenta and flour, then add the zest and juice of 1 orange
    3. Add the cranberries, cinnamon and vanilla seeds
    4. Place the mixture into 2 lined bread tins and bake for 25-30 minutes until golden brown and cooked
