Breakfast muffin

    Egg 1 large
    Whole milk 1 tablespoon
    Butter (melted) 1 tablespoon
    Salt 1 pinch
    Pepper 1 pinch
    Onion (diced) 15g
    Pepper (diced) 15g
    English muffin 1
    Sliced cheese 1


    1. In a small cup, plastic bowl or ramekin melt the butter in the microwave for 10-15 seconds.
    2. Add the egg to the butter in the bowl and beat well. Add milk.
    3. Add diced onion and pepper to taste.
    4. Cover the dish with a paper towel and microwave on high for 1 minute and 30 seconds.
    5. Toast the English muffin.
    6. Remove the bowl from the microwave and loosen the egg with a spoon around the edges (which should be solid and fluffy).
    7. Place the cheese on the muffin and top with the egg. Serve warm.
