- Place the flour, eggs and milk in a bowl and whisk well until the mixture is smooth and and has no lumps.
- Fold the blueberries through.
- Place a pan on the stove and heat gently, then add a drizzle of oil.
- Ladle a spoonful of the pancake mixture into the hot pan and cook for 30 seconds. Then flip over and cook the other side until golden brown.
- Dust with icing sugar before serving.
