Blueberry pancakes

Blueberry pancakes sprinkled with a dusting of icing sugar - a great dish to satisfy any sweet tooth. Delicious as they are, but you could also serve with a drizzle of syrup!

Wholemeal flour 200g
Free range medium eggs 2pce
Whole milk 600ml
Frozen blueberries 400g
Vegetable oil 20ml
Icing sugar 30g


  1. Place the flour, eggs and milk in a bowl and whisk well until the mixture is smooth and and has no lumps.
  2. Fold the blueberries through.
  3. Place a pan on the stove and heat gently, then add a drizzle of oil.
  4. Ladle a spoonful of the pancake mixture into the hot pan and cook for 30 seconds. Then flip over and cook the other side until golden brown.
  5. Dust with icing sugar before serving.
