Roast Jersey royal asparagus with a feta bearnaise salad

Jersey royal potatoes 1.5kg
Pure olive oil 100ml
Asparagus, bunch 1
Everyday Favourites tarragon 15g
Banana shallots 50g
Everyday Favourites mayonnaise 400ml
Mixed heritage tomatoes 500g
Feta cheese 200g
Baby capers 30g
Extra virgin olive oil 50ml


  1. Scrub and cut the potatoes in half, coat in oil and seasoning and roast.
  2. Prep the asparagus, coat in a little oil and season, chargrill.
  3. Chop the tarragon and finely dice the shallots then mix with the mayonnaise.
  4. Wedge the tomato and bring all the ingredients together in desired presentation, finish with extra virgin olive oil drizzle serve at room temp.
