- Scrub and cut the potatoes in half, coat in oil and seasoning and roast.
- Prep the asparagus, coat in a little oil and season, chargrill.
- Chop the tarragon and finely dice the shallots then mix with the mayonnaise.
- Wedge the tomato and bring all the ingredients together in desired presentation, finish with extra virgin olive oil drizzle serve at room temp.
