1. Bake the croissants: Arrange your croissants on a lined baking tray, leaving a little space between each one. Bake according to the pack instructions until deeply golden.
2. Rest briefly: Allow the croissants to rest for 5 minutes.
3. Prepare the Gouda garnish: Spread a small amount of cream cheese, softened onto each Gouda & poppy seed croissant, then lay a single slice cucumber across the top.
4. Prepare the spinach & ricotta garnish: Drizzle each spinach, ricotta & pumpkin seed croissant with runny honey and tuck a small sprig of fresh thyme alongside.
5. Prepare the tomato & mozzarella garnish: Lay a slice of roasted red pepper across each tomato, mozzarella & multigrain croissant, then top it with a single leaf of fresh basil.
6. Arrange & finish: Arrange all three varieties on a slate board or tiered stand, grouping by flavour so guests can find their favourite at a glance. Finish the whole board with a pinch of freshly cracked black pepper and serve while still warm.
