Jerk chicken nuggets with ginger beer batter and a jerk mango mayo dip

Farmstead diced chicken 2kg
Major Caribbean jerk mari-base 380ml
Middleton’s gluten free batter mix 500g
Schweppes ginger beer 600ml
Everyday Favourites mayonnaise 350ml
Boiron mango purée 200ml


  1. Mix the diced chicken with 200ml of the jerk Mari base and set to one side covered in the fridge for about an hour.
  2. Mix the batter with the ginger beer and leave to rest.
  3. Mix the remainder of the jerk base with the mayonnaise & mango purée and place into the fridge.
  4. Once the chicken is sufficiently marinated coat with batter and fry in small batches until all the chicken is cooked.
  5. Serve with lime wedges and the jerk mango mayonnaise.
Chefs tip: serve with freshly chargrilled lime wedges.
