Filipino ensaladang talong

A grilled aubergine, tomato and red onion salad – the perfect side dish for a BBQ!

Aubergine (black) 5
Green chillies 30g
Red onion (whole) 180g
Cherry tomato on the vine 500g
Red wine vinegar 30ml
Olive oil 30ml


  1. Chargrill the aubergines and green chillies before allowing them to cool.
  2. Peel and dice the aubergine and chilli and place them into a bowl.
  3. Finely dice the red onion and add this to the mix. Cut the tomatoes into quarters and fold these through.
  4. Finally, dress with vinegar and oil before setting to one side. Serve this up as a side dish with our Filipino grilled chicken.
