Ingredients
Everyday Favourites puff pastry block | 800g |
Pork sausage meat | 454g |
Cranberries | 150g |
Thyme, chopped | 1.5g |
Everyday Favourites cracked black peppercorn | 1g |
Sea salt | 2g |
Everyday Favourites free range medium eggs | 3 |
Farmstead smoked rindless streaky bacon | 50g |
Method
- Defrost and roll the pastry into a 12x8 inch rectangle
- Mix the sausage meat with the cranberries, chopped thyme, black pepper and salt and place down the lower quarter of the pastry width ways.
- Egg wash and roll into a sausage roll, then egg yolk glaze and set to one side
- Meanwhile cook the bacon between two baking sheets until crispy, then allow to chill and blend to a crumb
- Sprinkle liberally onto the sausage roll and the add sprigs of thyme and bake until cooked for about 25-30 minutes
