Christmas cranberry sausage roll

Delicate puff pastry wrapped around succulent sausage meat and cranberry stuffing mix, deeply glazed with egg yolk and finished with thyme.

    Everyday Favourites puff pastry block 800g
    Pork sausage meat 454g
    Cranberries 150g
    Thyme, chopped 1.5g
    Everyday Favourites cracked black peppercorn 1g
    Sea salt 2g
    Everyday Favourites free range medium eggs 3
    Farmstead smoked rindless streaky bacon 50g


    1. Defrost and roll the pastry into a 12x8 inch rectangle
    2. Mix the sausage meat with the cranberries, chopped thyme, black pepper and salt and place down the lower quarter of the pastry width ways.
    3. Egg wash and roll into a sausage roll, then egg yolk glaze and set to one side
    4. Meanwhile cook the bacon between two baking sheets until crispy, then allow to chill and blend to a crumb
    5. Sprinkle liberally onto the sausage roll and the add sprigs of thyme and bake until cooked for about 25-30 minutes
