Medium sized beetroot scrubbed 2
Butternut squash 1
Large parsnips 2
Everyday Favourites vegetable oil drizzle
Everyday Favourites runny honey drizzle
Kale 100g
Butter dollop

  1. Preheat oven to 180 degrees.
  2. Cut beetroot, carrots, butternut squash and parsnips into roughly equal sized chunks.
  3. Drizzle with honey and oil and season to taste. Cook in preheated oven for 20 min.
  4. On a separate tray, place the frozen scampi and cook as per instructions for 18 min.
  5. Serve with steamed kale and a dollop of butter.
