Welsh rarebit pancakes with tomato chutney

Buttermilk welsh rarebit pancakes, made with rich cheddar cheese and topped with tomato chutney, poached egg and rocket leaf salad

Ingredients

  • Salted butter 30g
  • Plain white flower 65g
  • Guinness draught (440ml can) 1/2 can
  • Extra mature white cheddar cheese 200g
  • Large fresh eggs 6
  • English mustard 10ml
  • Worcestershire sauce 18ml
  • Cayenne pepper 0.2g
  • Sea salt 1g
  • Cracked black peppercorn 0.2g
  • Traditional pancakes (frozen) 8 pancakes
  • Tomato chutney 60g
  • Spring onion trimmed 1 piece
  • Rocket leaf salad 20g

Method

  1. Pre-poach 4 eggs and grate the cheese
  2. Add the butter to a saucepan to melt it, then add the flour and cook out for 3-4 minutes
  3. Stir in the Guinness, and then fold through the grated cheese. Allow this to cool slightly before adding 2 egg yolks, English mustard, Worcestershire sauce, cayenne pepper, salt and pepper. Combine these well and then cool until the rarebit mixture is set
  4. Spread the pancakes with chutney and then the rarebit mix, and toast under a very hot grill to glaze
  5. Serve with a poached egg, a little more chutney, sliced spring onions and a fresh rocket salad. Finally, drizzle with oil if you wish
