Vegan breakfast muffin

Ingredients

  • Plum tomato 40g
  • Tempeh 10g
  • Everyday Favourites pure Canadian maple syrup 2g
  • Tamari soy sauce 10ml
  • Organic tofoo 30g
  • Ground turmeric
  • Everyday Favourites English muffin 1
  • Vegan sliced cheddar style cheese 30g
  • Avocado slices 20g
  • Baby spinach 5g
  • Cold pressed rapeseed oil 10ml

Method

  1. Slice and slow roast the tomato
  2. Slice the tempeh and drizzle with maple syrup and soy sauce then grill and set to one side
  3. Crumble the tofoo into a frying pan and add turmeric - mix together and warm through
  4. Toast the muffin and top with the tomato, tempeh bacon, scrambled tofoo and sliced cheese and grill
  5. Finish with slices of avocado, baby spinach and a drizzle of oil
