Kentucky fried jackfruit recipe

Green jackfruit in brine 500g
Everyday Favourites cajun spice 30g
Smoked paprika 10g
Everyday Favourites chilli powder 10g
Everyday Favourites garlic powder 6g
Everyday Favourites ground ginger 4g
Everyday Favourites cracked black peppercorn 1g
Everyday Favourites plain flour 250g
Bicarbonate of soda bag 10g
Alpro unsweetened soya milk 300ml
Everyday Favourites mixed herbs 8g
Lion South Carolina BBQ sauce 200ml


  1. Drain the jackfruit and place into a deep mixing bowl with the cajun spice, smoked paprika, chilli powder, garlic powder, ginger and black pepper and combine together and place onto a baking tray and cook for 15-20 minutes.
  2. In another mixing bowl add 100g of flour, bicarbonate of soda, soya milk and mixed herbs.
  3. Once the jackfruit is cooked allow to cool slightly then dip into the batter and tumble in the flour and deep fry until golden and crunchy.
