The Dukes chick peas & chips

A delicious dish to conjure up a taste of our gastronomic adventures in the Middle East – rich and creamy hummus, gloriously partnered by the Dukes, all dressed up in a spice coat, to tantalise with far-flung flavour favours.

The Dukes, by Lamb Weston 120g
Hummus 40g
Tomatoes, cut into wedges 50g
Fresh coriander 3g
Spice blend (see below) 3g
Tahini 20g
Sumac 2g
Spice blend
Ground cumin 10g
Everyday Favourites ground coriander 10g
Everyday Favourites ground cinnamon 5g
Everyday Favourites salt 10g

  1. Combine the spices to make the spice blend and set aside until needed, saving the remainder for another time
  2. Fry the Dukes according to the instructions
  3. To serve, ‘smear’ the hummus onto a serving plate, add the tomatoes and the fresh coriander
  4. Toss the Dukes in the spice blend to coat well, add to the plate and finish with a drizzle of tahini and a sprinkle of sumac
