Pulled Turkey with caramelised onions and sage

A festive puff pastry roll filled with pulled turkey, caramelised onions, pork sausage meat, and chestnuts, seasoned with sage. Served alongside a rich cranberry and brie dip baked with cream for a warm, indulgent finish.

Ingredients

Pulled Turkey with caramelised onions 1
Tranfield pork sausage meat 200g
Chestnuts, chopped 80g
Everyday Favourites cranberry sauce 100g
Everyday Favourites puff pastry sheets 350g
Egg yolk 40g
Casa De Mare sea salt 1g
Thyme 1g
Double cream 100ml
Brie 100g

Method

  1. Prepare the filling: Mix the turkey and sausage meat with chopped chestnuts and half the cranberry sauce.
  2. Make the rolls: Form into a sausage roll, cut into individual rolls, brush with egg yolk, and sprinkle with sea salt and crumbled thyme.
  3. Bake the dip: Place the remaining cranberry sauce into a heatproof dish. Top with cream mixed with three-quarters of the brie, then layer with slices of brie. Bake until reduced and golden on top.
  4. Serve: Present the warm pastry rolls alongside the brie and cranberry dip.
