Dr. Oetker breakfast bars

Ingredients

Dr. Oetker Gluten Free Cake Mix 800g
Vegetable oil 64ml
Water 250ml
Dr. Oetker Vanilla 3 tsp
Honey 4 tbsp
Dates, chopped 100g
Mixed seeds (chia, sunflower, linseed, sesame) 150g
Mixed nuts (almonds, macadamia, hazelnuts, cashews) 200g
Honey to drizzle

Method

  1. Add the oil and water to the dry mix and beat with a spoon or machine paddle for 3-4 minutes or until smooth and it has no lumps.
  2. Stir in the vanilla, honey, dates, seeds and nuts. If the mixture is too dry you can add a little more honey.
  3. Spoon the mixture into a lined 10” square cake tray and smooth flat.
  4. Cook at 170°c (150°c fan) gas mark 4, for 15-20 minutes until just firm to touch.
  5. Allow to cool fully before turning out, cut into bars and drizzle with a bit more honey.
