Cuban tostones

These fried plantain chunks are an authentic Cuban street food dish, and they can make the perfect snack or appetizer.

Ingredients

  • Sea salt 3g
  • Extended life vegetable oil 60ml
  • Garlic powder 3g
  • Pure Canadian maple syrup 5g
  • Plantain banana (chilled) 500g

Method

  1. Heat the oil in a heavy skillet over medium heat. Place a few plantain slices in the oil, and cook until lightly golden in colour. This should take about 3 minutes.
  2. Once golden, remove from the pan and drain the slices on paper towels. Repeat with the remaining slices.
  3. Whilst the slices are still warm, place them one at a time between 2 sheets of wax paper, and flatten them by hand so that they’re ¼ inch thick. Return the flattened slices to the skillet and continue frying them until golden brown.
  4. Drain them on paper towels before finally seasoning with salt and garlic powder.
  5. Pour the maple syrup over the top before serving them up.
