- Boiled eggs, sliced 4
- Extra-virgin olive oil 3 tbsp
- Balsamic vinegar 1 tbsp
- Dijon mustard 1 tsp
- Honey 1 tsp

- In a large salad bowl, combine the mixed salad greens, slice Peppadew bites, red onion, sliced parmesan cheese and eggs.
- In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt and pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
- Serve the crispy Peppadew bite salad immediately as a refreshing and flavourful side dish or light meal.
