Coconut Japanese soufflé pancakes

Coconut Japanese soufflé pancakes topped with an apple and blackberry compote flavoured with cinnamon and baked pecan nuts, with a seeded crumb topping.

Ingredients

  • Everyday Favourites self raising flour 600g
  • Baking powder gluten free 15g
  • Everyday Favourites free range medium eggs 6
  • Everyday Favourites squeezy clear blossom honey 100ml
  • Skimmed milk bottle 720ml
  • Everyday Favourites ground cinnamon 5g
  • Granny Smith apple 1kg
  • Blackberries 2 punnets

Method

  1. Sieve the flour and baking powder together.
  2. Add the beaten egg yolks and honey.
  3. Whisk in the milk till it forms a nice smooth batter.
  4. Whisk the egg whites and cut in.
  5. Serve with stewed apples and blackberries.
