Ingredients
- Everyday Favourites hi-life vegetable oil - tub 20ml
- Everyday Favourites salted butter 20g
- Spring onions 4
- Red Pepper 1
- Everyday Favourites eggs 4
- Mint 20g
- Coriander 20g
- Lime (whole) 1
- Asian garlic & chilli sauce 40ml
Method
- Heat a large frying pan and add the oil and butter
- Sauté half the spring onions (reserve the rest for garnish) then add the red pepper slices
- Whisk the eggs with herbs and lime zest and cook in the oil & butter
- Once cooked fold and place on a warmed plate. Cut a slit down the top and sprinkle with the remaining spring onions
- Drizzle with the sauce and garnish with sprigs of mint, coriander and a lime wedge
