- Whitby Seafoods Yorkshire scampi bites 1 bag
- Medium sized beetroot scrubbed 2
- Butternut squash 1
- Large parsnips 2
- Everyday Favourites vegetable oil drizzle
- Everyday Favourites runny honey drizzle
- Kale 100g
- Butter dollop
Method

- Preheat oven to 180 degrees.
- Cut beetroot, carrots, butternut squash and parsnips into roughly equal sized chunks.
- Drizzle with honey and oil and season to taste. Cook in preheated oven for 20 min.
- On a separate tray, place the frozen scampi and cook as per instructions for 18 min.
- Serve with steamed kale and a dollop of butter.
