Teriyaki salmon

Succulent salmon with a charred stem broccoli with a lime, chilli and sesame dressing.

Ingredients

  • Shallots 100g
  • Salmon steaks, skin on 10
  • Tenderstem broccoli 1kg
  • Everyday Favourites sesame seeds 30g
  • Black sesame seeds 30g
  • Teriyaki sauce 200g
  • Limes, juiced 5
  • Rice wine vinegar 30ml
  • Olive oil 100ml
  • Red chillis 10g

Method

  1. Peel and slice the shallots and defrost the salmon.
  2. Chargrill the tenderstem broccoli and allow to cool.
  3. Mix half the sesame seeds with the teriyaki sauce and glaze the salmon - cook for 15 minutes or until cooked thoroughly.
  4. Dress the broccoli with lime juice, rice wine, and a pinch of the sesame seeds with olive oil.
  5. Add the remaining sesame seeds, sliced shallots and chopped red chilli.
  6. Serve with steamed rice or noodles if desired.
