- Cook the sweet potato fries according to the instructions. Meanwhile, finely dice the apple and stew slowly with the sugar and cinnamon on a low heat until soft.
- Place the freshly cooked sweet potato fries into a serving dish, sprinkle with icing sugar and gently flambé until you have a very thin crust, similar to a crème brûlée.
- Add the stewed apple over the top and decorate with the summer berries and mint prior to serving.
