Ingredients
| Sourdough seeded bloomer | 1 slice |
| Extra virgin olive oil | 30ml |
| Seasoned avocado smash | 60g |
| Mascarpone | 50g |
| Smoked salmon | 60g |
| Sliced pickled red onion | 60g |
| Red micro tomato | 30g |
| Spiced candied seeds | 2g |
| Dill | 10g |
| Lemons | 1 |
Method
- Prepare the base: Slice the sourdough bloomer and drizzle lightly with olive oil. Grill or toast until golden and crisp.
- Layer the flavours: Spread the seasoned avocado smash over the warm bread.
- Add richness: Dollop the mascarpone evenly across the toast.
- Top generously: Lay slices of smoked salmon over the mascarpone.
- Brighten it up: Scatter pickled red onion, halved tomatoes, and candied seeds on top.
- Finish & serve: Garnish with sprigs of fresh dill and serve with a squeeze of grilled lemon for freshness.
