Slow cooked beef shin with caramelised onion

Mini Yorkshire puddings filled with slow-cooked pulled beef and caramelised onions, topped with brioche crumb, truffle mayonnaise, and served with rich beef gravy for dipping. A hearty, comforting dish perfect for sharing or as an indulgent starter.

Ingredients

Everyday Favourites plain white flour 140g
Everyday Favourites large eggs 4
Whole milk 200ml
Everyday Favourites vegetable oil 70ml
Pulled beef with caramelised onions 1
Brioche loaf 100g
Parsley 20g
Everyday Favourites gravy mix 200g
Truffle mayonnaise 60g

Method

  1. Make the batter: Mix the flour, eggs, and milk together until smooth. Set aside.
  2. Cook the Yorkshire puddings: Heat the oil in mini muffin tins. Pour in the batter and bake at 200°C for 15–20 minutes until golden and risen.
  3. Prepare the beef: Heat the pulled beef and keep warm.
  4. Make the crumb: Blend the brioche with parsley, then toast in a hot pan until crunchy.
  5. Prepare the gravy: Make up the gravy mix according to instructions and keep warm.
  6. Assemble: Fill the puddings with beef, top with truffle mayonnaise and brioche crumb, then serve with the gravy.
