Ingredients
Double Cream | 100ml |
Lobster Glace | 100g |
Roeless Scallop Meat | 4 pieces |
Smoked Rindless Streaky Bacon | 150g |
Apple Pink Lady | 50g |
Method
- Pan fry the bacon over a medium heat until crispy and all the juices are released. Remove, leaving the remaining juices in the pan and set aside.
- Add the scallops to the pan with the bacon juices, seal and cook on a high heat for 2 minutes.
- Remove from the heat and set aside.
- Meanwhile, warm the cream in a small saucepan, add the lobster glaze and mix thoroughly. Once combined remove from the heat.
- Slice the apple into small matchstick slices.
- To plate, place the scallops on a plate, top with the diced bacon and drizzle over the lobster sauce.
- To finish, garnish with the apple matchsticks.
