Trio of Scandinavian Open Sandwiches

A collection of three open sandwiches – beef, horseradish and pickle; salmon, mustard and capers; and egg, prawn, mayonnaise and red onion.

Everyday Favourites salted butter 250g 60g
Farmstead deli UK red tractor sliced cooked beef topside 10g
John Ross Jr traditional Scottish smoked sliced side d-cut salmon 10g
Free range hard boiled eggs 4
Cress micro parsley 5g
Cress salad 10g
Dill 5g
Cress sakura mixed 1 piece
Red onion whole 20g
Wholemeal soda bread 50g
Clear seas cooked & pealed king prawns (70-90/lb) 16 pieces
Baby capers 30g
Colmans's horseradish relish 40ml
Everyday Favourites coarse grain mustard 20ml
Heinz professional mayonnaise 15ml
pickled gherkins with dill flavouring 80g


  1. Slice the bread into one and a half slices, and butter each piece.
  2. Mix half the mayonnaise with horseradish and set this to one side.
  3. Top one batch of bread with smoked salmon slices, capers, dill and mustard.
  4. Top the second batch of sliced bread with horseradish mayonnaise, dill, pickles and parsley.
  5. Top the third slice of bread with slices of hard-boiled egg, defrosted prawns, mayonnaise, sliced red onion and mixed watercress.
  6. Serve with lemon.
