Ingredients
| Pacific West red velvet prawns | 40 |
| Everyday Favourites garlic & herb mayonnaise | 400ml |
| Blue Dragon sriracha | 100ml |
| Arco lime juice squeezy | 15ml |
| Little gem lettuce | 10 |
| Plum tomatoes | 5 |
| Avocado | 4 |
| Pure olive oil glass | 20ml |
| Lime wedges | to serve |
| Mixed baby herbs | 10g |
Method
- Cook the prawns as per instructions and keep warm.
- Mix the mayonnaise, sriracha and lime juice together and keep chilled.
- Trim the lettuce into chunks and quickly scorch with a blow torch and set to one side.
- Dice the tomato and avocado and dress with oil.
- Tumble the lettuce & tomato mix together with 200ml of dressing and serve on your chosen plate.
- Top with the cooked prawns and wedges of lime.
- Top with mixed baby herbs and a drizzle of sauce.
