Ingredients
- Everyday Favourites quinoa and vegetables mix 2kg
- Everyday Favourites raw Scottish salmon portions (skinless) 140-170g 10
- Everyday Favourites sweet chilli sauce 200ml
- Everyday Favourites extended life vegetable oil (BiB) 30ml
- Lime juice fresh 20ml
- Chopped corriander 10g
- Chopped mint 10g
Method
Pre-prepared instructions - heat quinoa as per instructions for frying / defrost salmon / pre heat oven 180c- Reheat the Quinoa & Vegetables - stri fry
- Sear the salmon in a very hot pan until slightly charred on the outside then place in pre heated oven for 12 mins
- Whisk the sweet chilli sauce , oil and lime juice until emulsified then add the chopped coriander & mint
- Serve the Quinoa in your desired bowl and top with the cooked salmon fillet
- Spoon over the dressing and serve with a fresh lime wedge - simple & quick
