Quinoa and vegetables with seared salmon

Ingredients

  • Everyday Favourites quinoa and vegetables mix 2kg
  • Everyday Favourites raw Scottish salmon portions (skinless) 140-170g 10
  • Everyday Favourites sweet chilli sauce 200ml
  • Everyday Favourites extended life vegetable oil (BiB) 30ml
  • Lime juice fresh 20ml
  • Chopped corriander 10g
  • Chopped mint 10g

Method

Pre-prepared instructions  - heat quinoa as per instructions for frying / defrost salmon / pre heat oven 180c
  1. Reheat the Quinoa & Vegetables - stri fry
  2. Sear the salmon in a very hot pan until slightly charred on the outside then place in pre heated oven for 12 mins
  3. Whisk the sweet chilli sauce , oil and lime juice until emulsified then add the chopped coriander & mint
  4. Serve the Quinoa in your desired bowl and top with the cooked salmon fillet
  5. Spoon over the dressing and serve with a fresh lime wedge - simple & quick
