Ingredients
- Red capsicum pepper 1
- Onions 180g
- Olive oil 45ml
- Fable plant based meaty pulled mushrooms 1.2kg
- Chipotle paste 120g
- Smoked paprika 10g
- Everyday Favourites hot chilli powder 1g
- Sea salt 5g
- Beef tomatoes, chopped 300g
- Multi use tomato base 500g
- Red kidney beans 400g
- Jalapeño peppers, sliced 70g
- Coriander, chopped 20g
- Limes 5
Method
- Chargrill the peppers, then skin and roughly chop.
- Peel and slice the onions.
- In a saucepan add the oil and sauté the sliced onions until caramelised.
- Add the fable and stir, add the chipotle paste and seasonings, with chopped tomatoes and tomato base - slow cook for 20-25 minutes.
- Add all the remaining ingredients and cook for a further 10 minutes.
- Finish with chopped coriander and grilled limes.
- Serve with rice and cornbread if desired.
