Ingredients
| Red capsicum pepper | 1 |
| Onions | 180g |
| Olive oil | 45ml |
| Fable plant based meaty pulled mushrooms | 1.2kg |
| Chipotle paste | 120g |
| Smoked paprika | 10g |
| Everyday Favourites hot chilli powder | 1g |
| Sea salt | 5g |
| Beef tomatoes, chopped | 300g |
| Multi use tomato base | 500g |
| Red kidney beans | 400g |
| Jalapeño peppers, sliced | 70g |
| Coriander, chopped | 20g |
| Limes | 5 |
Method
- Chargrill the peppers, then skin and roughly chop.
- Peel and slice the onions.
- In a saucepan add the oil and sauté the sliced onions until caramelised.
- Add the fable and stir, add the chipotle paste and seasonings, with chopped tomatoes and tomato base - slow cook for 20-25 minutes.
- Add all the remaining ingredients and cook for a further 10 minutes.
- Finish with chopped coriander and grilled limes.
- Serve with rice and cornbread if desired.
