Ingredients
- Farmstead pork loin - boneless rindless 4kg
- D’Autore mini chorizo barbecue 300g
- Everyday Favourites grated mozzarella & mild Cheddar mix 150g
- Whole piquillo peppers 100g
- Maldon sea salt 2g
- Everyday Favourites cracked black peppercorn 5g
- Pure olive oil 20ml
Method
- Pre heat oven 180ºc. Split the loin of pork laterally and open up, then place cling film and batt out slightly until its all one thickness.
- Sprinkle the chopped chorizo, cheese & piquillo peppers across the whole surface then roll and tie with butchers string.
- Place the rolled pork loin onto a roasting tray and drizzle with oil, salt & pepper and place into the preheated oven and cook for about 1 1/2 hours or until cooked.
- Remove from the oven and allow to rest then carve and serve.
