Pork loin stuffed with chorizo, cheese & piquillo peppers

Ingredients

  • Farmstead pork loin - boneless rindless 4kg
  • D’Autore mini chorizo barbecue 300g
  • Everyday Favourites grated mozzarella & mild Cheddar mix 150g
  • Whole piquillo peppers 100g
  • Maldon sea salt 2g
  • Everyday Favourites cracked black peppercorn 5g
  • Pure olive oil 20ml

Method

  1. Pre heat oven 180ºc. Split the loin of pork laterally and open up, then place cling film and batt out slightly until its all one thickness.
  2. Sprinkle the chopped chorizo, cheese & piquillo peppers across the whole surface then roll and tie with butchers string.
  3. Place the rolled pork loin onto a roasting tray and drizzle with oil, salt & pepper and place into the preheated oven and cook for about 1 1/2 hours or until cooked.
  4. Remove from the oven and allow to rest then carve and serve.
