Pear and Stilton salad

A delicious winter salad with crisp pear and Stilton cheese, finished with toasted walnuts and pecans in a zesty lemon

Ingredients

  • Sourdough ciabatta burger bun 2
  • Everyday Favourites walnut pieces 100g
  • Pecan nuts 100g
  • Conference pear, sliced 500g
  • Watercress 200g
  • Premium Selection Blue Stilton 500g
  • Cold pressed rapeseed oil 100ml
  • Dijon mustard 30g
  • Caster sugar 40g
  • Sea salt 3g
  • Everyday Favourites cracked black peppercorn 1g
  • Lemons, juiced 2

Method

  1. Dice the bread and bake until golden, toast the walnuts and pecans.
  2. Slice the pear and place into a bowl with watercress and crumbled Stilton.
  3. To make the dressing, add the oil, dijon, sugar, salt and black pepper. Add the juice from two lemons in a blender and combine together.
  4. Dress the leaf and salad and then mix in the walnuts/pecans and croutons.
