Ingredients
| Granulated sugar | 25g |
| Everyday Favourites white wine vinegar | 30ml |
| Red onion (sliced) | ½ |
| Slaw mix | 40g |
| Juice from fresh lemon | ½ |
| Juice from fresh Lime | 1 |
| Coriander (chopped) | 20g |
| Avocado | 30g |
| Sweet potato fries | 200g |
| Mock chicken popcorn | 100g |
| Pumpkin seeds | 10g |
| Sunflower seeds | 10g |
| Spring onion (sliced) | 1 |
| BBQ sauce | 30ml |
| Mayonnaise | 40ml |
| Sriracha sauce | 10ml |
| Crispy fried onions | 10g |
Method
- Reduce the sugar and vinegar in a pan, then pour over the sliced red onion for a quick pickle and set aside
- Combine the slaw mix with lemon and lime juice and chopped coriander
- Mash the avocado and mix with lemon and lime juice and chopped coriander
- Deep fry the sweet potato and popcorn mock chicken for 4-5mins and toast the seeds in a hot pan with oil until crispy
- Layer up your dirty fries, with the sweet potato fries at the bottom, then the mock chicken, smashed avo, slaw, pickled onions and sliced spring onions
- Drizzle over plenty of the BBQ sauce, mayonnaise and sriracha before the final garnish of toasted seeds, coriander and crispy onions
