Ingredients
| Brioche butter loaf | 160g |
| Mincemeat | 80g |
| Liquid egg mix | 200g |
| Gingerbread flavour syrup | 40ml |
| Everyday Favourites vegetable oil | 5ml |
| Everyday Favourites unsalted butter | 40g |
| Icing sugar | 15g |
| Crème anglaise | 60ml |
| Dark pitted cherries | 25g |
| Micro mint | 3g |
Method
- Prepare the base: Slice the brioche thickly and sandwich together with the mincemeat.
- Make the custard mix: Combine the egg mix with the gingerbread syrup.
- Heat the pan: Warm the oil in a frying pan.
- Cook the toast: Dip the brioche sandwich into the egg mixture, then pan fry until golden. Add butter to caramelise.
- Finish the dish: Dust with icing sugar, serve with crème anglaise and cherries.
- Garnish: Add fresh micro mint before serving.
