Gingerbread French toast sandwiched with mincemeat

A festive twist on French toast using thick brioche slices sandwiched with rich mincemeat, dipped in a gingerbread-spiced egg mixture, and pan-fried to golden perfection. Served with crème anglaise, cherries, a dusting of icing sugar, and a hint of fresh mint.

Ingredients

Brioche butter loaf 160g
Mincemeat 80g
Liquid egg mix 200g
Gingerbread flavour syrup 40ml
Everyday Favourites vegetable oil 5ml
Everyday Favourites unsalted butter 40g
Icing sugar 15g
Crème anglaise 60ml
Dark pitted cherries 25g
Micro mint 3g

Method

  1. Prepare the base: Slice the brioche thickly and sandwich together with the mincemeat.
  2. Make the custard mix: Combine the egg mix with the gingerbread syrup.
  3. Heat the pan: Warm the oil in a frying pan.
  4. Cook the toast: Dip the brioche sandwich into the egg mixture, then pan fry until golden. Add butter to caramelise.
  5. Finish the dish: Dust with icing sugar, serve with crème anglaise and cherries.
  6. Garnish: Add fresh micro mint before serving.
