East African mango and cucumber salad

This punchy East African salad is full of fresh ingredients and flavour.

Ingredients

  • Dry roasted peanuts 20g
  • Sea salt 5g
  • Vegetable oil 10ml
  • Ground cinnamon 1g
  • Cumin seeds 3g
  • Cherry tomato (on the vine, chilled) 300g
  • Coriander 20g
  • Cucumber (35-40mm, chilled) 1
  • Garlic (pre packed, chilled) 6g
  • Green chillies (chilled) 10g
  • Limes (chiled) 2
  • Mango (chilled) 2
  • Red onion (chilled) 20g

Method

  1. Toss together the sliced cucumber, diced onion, salt and garlic in a colander. Let it stand for 20 minutes to drain.
  2.  Meanwhile, in a large bowl, mix together the peanut oil, diced and seeded tomato, chopped chilli, cumin, cinnamon and diced mango.
  3. Add the cucumber mixture to the bowl and toss all of the ingredients together.
  4.  Finally, garnish the salad with a small handful of peanuts, chopped coriander and fresh lime juice.
