Ingredients
- Dry roasted peanuts 20g
- Sea salt 5g
- Vegetable oil 10ml
- Ground cinnamon 1g
- Cumin seeds 3g
- Cherry tomato (on the vine, chilled) 300g
- Coriander 20g
- Cucumber (35-40mm, chilled) 1
- Garlic (pre packed, chilled) 6g
- Green chillies (chilled) 10g
- Limes (chiled) 2
- Mango (chilled) 2
- Red onion (chilled) 20g
Method
- Toss together the sliced cucumber, diced onion, salt and garlic in a colander. Let it stand for 20 minutes to drain.
- Meanwhile, in a large bowl, mix together the peanut oil, diced and seeded tomato, chopped chilli, cumin, cinnamon and diced mango.
- Add the cucumber mixture to the bowl and toss all of the ingredients together.
- Finally, garnish the salad with a small handful of peanuts, chopped coriander and fresh lime juice.
