Courgette Balls

Light and fluffy courgette balls or fritters, made with fresh and zesty flavours of feta and mint, served with a sprinkling of chopped coriander and creamy tzatziki

Ingredients

  • Medium Eggs 1
  • Kalos Feta Cheese 60g
  • Orexis Beetroot Tzatziki 5g
  • Sea Salt 5g
  • Cracked Black Peppercorn 5g
  • Self Raising Flour 100g
  • Fresh Coriander 10g
  • Courgette 250g
  • Fresh Mint 20g
  • White Onion 25g

Method

  1. Grate the courgette, drain and salt leave for 15 to 30 minutes. Then gently squeeze to remove as much water as possible. Peel and finely slice the onion, crumble the feta and chop the mint.
  2. Combine the eggs, onion, mint, feta, courgette and seasoning, then add the flour to make a soft dough.
  3. Pre heat a fryer to 180c. Depending on whether you wish to form the mixture as a ball or fritter shape, form accordingly and drop a tablespoon of the dough into the fryer, then cook for 2-3 minutes or until golden brown.
  4. Serve with the chopped coriander and the tzatziki.
