Ingredients
| Farmstead Red Tractor beef hand diced | 1kg |
| Everyday Favourites unsalted butter | 50g |
| Sliced onions | 800g |
| Bay leaves | 2g |
| Thyme | 3g |
| Soft brown sugar | 15g |
| Everyday Favourites salt | 4g |
| Tomato puree | 30g |
| Everyday Favourites plain white flour | 30g |
| Wholegrain mustard | 40ml |
| Beef stock mix | 10g |
| Beer | 660ml |
| Julienne fries | 1.5kg |
Method
- Heat a large pan and sauté the beef until browned, drain over colander and reserve the juices.
- Add the butter and melt to the same pan and cook the onions until soft and caramelised.
- Then add the bay leaf, thyme, sugar, salt, tomato puree and cook out for 2-3 minutes on a low heat.
- Add the flour and continue to cook out then add the mustard, beef stock, beer and the beef back into the pan.
- Cover and cook for 2-3 hours or until the beef is tender and the sauce has reduced.
- Serve with fries.
