Carbonnade a la flamande stew

Ingredients

  • Farmstead Red Tractor beef hand diced 1kg
  • Everyday Favourites unsalted butter 50g
  • Sliced onions 800g
  • Bay leaves 2g
  • Thyme 3g
  • Soft brown sugar 15g
  • Everyday Favourites salt 4g
  • Tomato puree 30g
  • Everyday Favourites plain white flour 30g
  • Wholegrain mustard 40ml
  • Beef stock mix 10g
  • Beer 660ml
  • Julienne fries 1.5kg

Method

  1. Heat a large pan and sauté the beef until browned, drain over colander and reserve the juices.
  2. Add the butter and melt to the same pan and cook the onions until soft and caramelised.
  3. Then add the bay leaf, thyme, sugar, salt, tomato puree and cook out for 2-3 minutes on a low heat.
  4. Add the flour and continue to cook out then add the mustard, beef stock, beer and the beef back into the pan.
  5. Cover and cook for 2-3 hours or until the beef is tender and the sauce has reduced.
  6. Serve with fries.
