Ingredients

For the muffins

  • Everyday Favourites plain flour 250g
  • Caster sugar 200g
  • Candied orange 125g
  • Golden raisins 50g
  • Everyday Favourites cocoa powder 45g
  • Bicarbonate of soda 5g
  • Everyday Favourites ground cinnamon 2g
  • Everyday Favourites ground nutmeg 1g
  • Everyday Favourites free range egg 1
  • Plain yoghurt 200g
  • Vanilla extract 5g
  • Milk 120ml
  • Vegetable oil 120ml
  • Callebaut 811 dark chocolate callets 40g

For the milk chocolate ganache

  • Whipping cream 150g
  • Glucose 20g
  • Callebaut 823 milk chocolate callets 200g

For the gold ganache cross

  • Whipping cream 50g
  • Glucose 10g
  • Callebaut gold chocolate callets 100g

For decoration

  • Callebaut dark chocolate blossoms per cup cake 10g

Method

Muffins:
  1. Pre-heat the oven to 180ºc
  2. Melt the Callebaut dark chocolate callets
  3. Sieve together the dry ingredients
  4. Whisk together the egg, yoghurt, vanilla extract, milk and vegetable oil
  5. Add the melted chocolate and mix well
  6. Add the dry ingredients and mix well
  7. Pipe into muffin cases and bake for 12 minutes
  Milk chocolate ganache:
  1. Heat the cream and glucose together just to the boiling point
  2. Remove from the heat and add to the Callebaut 823 milk chocolate callets
  3. Mix until melted
  4. Leave to thicken
  Gold ganache cross:
  1. Heat the cream and glucose together just to the boiling point
  2. Remove from the heat and add to Callebaut gold chocolate callets
  3. Mix until melted
  4. Leave to thicken
  Assembly:
  1. Place the milk chocolate ganache into a bowl and dip the tops of the muffins in it
  2. Place the gold ganache in a piping bag and pipe a cross on top of the milk ganache
  3. Sprinkle dark chocolate blossoms around the edge of each of the muffins
