- Little Gem Lettuce 0.5 piece
- Fresh Plum Tomatoes 100g
- Sliced Pickled Gherkins 50g
- Prepared Sweet Potato Wedges 2kg
- Piri Piri Seasoning 20g
- Prepared Grated Carrot 225g
- Prepared Red Cabbage Shredded 225g
- Prepared White Cabbage Shredded 225g
- Limes 1

- Vegetable Oil 60ml
- Table Salt 2g
- Cracked Black Peppercorn 1g
- Cider Vinegar 6% Acidity 33ml
- Tomato Purée 16.7g
- Cumin Powder 1g
- Ground Coriander 1g
- Ground Ginger 2g
- Granulated Sugar 33g
- Brown Onions 50g
- Garlic 7g
- Fresh Plum Tomatoes 40g
- Fresh Red Chillies 1g
- Plant- Based Smoked Bacon Pieces Pre- cooked and Ready to eat 33g
- White Bread and Roll Mix 250g
- Raw Loose Beetroot 110g
- Water 55ml
- Red Food Colouring 5ml
Method
- Place the beef, Fable mushrooms, egg and pepper in a bowl and mix well. Dry fry the onion and allow to cool then add the onions to the beef mix and mix well. Then divide the mixture into 10 and form into patties.
- Cook the burger to your liking on the grill, or in the oven, then allow to rest. Wash then slice the lettuce and tomato and set to one side.
- Peel and slice the sweet potatoes and then mix with the piri piri and cook until tender.
- Once all the elements are cooked, assemble the burger in the bun, with the lettuce, tomato, jam and gherkin.
- Serve with the sweet potatoes and citrus slaw.
- Cut the vegetables - white cabbage (shred), red cabbage (shred) carrot (grate) red onion (finely sliced)
- Place cabbage, carrot and onion into a bowl and mix well. Set aside
- In another bowl, place the oil, salt, pepper, orange zest, orange juice, lemon zest, lemon juice, lime zest and lime juice, mix well and add to the vegetable and mix well.
- In a large, heavy-bottomed saucepan, combine the chopped tomatoes, chilli peppers, onion, garlic, sugar, vinegar, salt, ginger, cumin, tomato puree and coriander
- Bring the mixture to a boil over medium-high heat, stirring frequently to prevent sticking and burning.
- Once the mixture reaches a boil, reduce the heat to low and let it simmer gently for about 45 minutes to 1 hour, or until it thickens to a jam-like consistency. Stir occasionally to ensure even cooking then fold through the bacon pieces and allow to infuse
- As the jam cooks, taste and adjust the seasoning as needed. You can add more sugar for sweetness or more chili peppers for extra heat, according to your preference.
- Once the jam has thickened to your desired consistency and the flavours have melded together, remove it from the heat and let it cool.
