Angel Delight banoffee mousse

Ingredients

  • Cold water 700ml
  • Angel Delight® butterscotch 125g
  • Angel Delight® banana 125g
  • Gluten free biscuits, crumbed 200g
  • Everyday Favourites cocoa powder 10g
  • Bananas 2
  • Lemon juice 1 tbsp

Method

  1. Pour 350ml of the cold water into a mixing bowl fitted with a whisk attachment. Add the Angel Delight Butterscotch and whisk for 30 seconds on slow speed.  Scrape down, increase the speed to high, and allow to whisk for 5 minutes (do not over-whisk.)
  2. Repeat with the Banana Angel Delight® and remaining 350ml cold water.
  3. Slice the banana and add lemon juice to stop it going brown.
  4. Pipe the Angel Delight®  into pots, layering both flavours with a sprinkling of the biscuit crumb and some sliced banana between each flavour.
  5. Refrigerate for one hour before serving.
