Toasted marshmallow bowls

Chick peas in water (water only) 40g
Caster sugar 20g
Your choice of 3 Little Moons Ice Cream Mochi balls
Caramel syrup 35ml


  1. Drain the chick peas and keep the water, weighing out the amount of water needed (use the drained chick peas in another recipe)
  2. Whisk the chick pea water on a high speed setting and add the sugar, until it forms stiff peaks and you have a vegan meringue
  3. Place 3 of the Little Moons into a serving dish
  4. Spoon over the meringue mixture and place under the grill under caramelized (or use a blow torch if you prefer)
  5. Drizzle over the caramel sauce
