Tilda jasmine rice with ginger soy turkey

Tilda fragrant jasmine rice 250g
Diced turkey 500g
Sugar 1/2 tsp
Lemon juice 1/2 tsp
Sunflower oil 1 tbsp
Small red pepper, sliced 1
Grated fresh ginger 1 tbsp
Spring onions, thinly sliced 4
Mangetout, sliced diagonally 50g
Light soy sauce 2 tbsps
Stock blended with 1 tsp cornflour 150ml
Sea salt & pepper to season
Fresh coriander or parsley garnish with

  1. Cook rice according to covered pan method on pack. Keep warm, mounded, on serving plate.
  2. Fry diced turkey in oil for 3 minutes, stirring, then add red pepper, ginger and onions. Cook for 5 minutes.
  3. Add mangetout, soy sauce, lemon juice and sugar. Cook for 2 minutes then mix in stock and cook to thicken.
  4. Check seasoning and spoon on top of rice. Garnish with herbs and serve hot.
