Tilda jasmine rice with ginger soy turkey

Ingredients

  • Tilda fragrant jasmine rice 250g
  • Diced turkey 500g
  • Sugar 1/2 tsp
  • Lemon juice 1/2 tsp
  • Sunflower oil 1 tbsp
  • Small red pepper, sliced 1
  • Grated fresh ginger 1 tbsp
  • Spring onions, thinly sliced 4
  • Mangetout, sliced diagonally 50g
  • Light soy sauce 2 tbsps
  • Stock blended with 1 tsp cornflour 150ml
  • Sea salt & pepper to season
  • Fresh coriander or parsley garnish with

  1. Cook rice according to covered pan method on pack. Keep warm, mounded, on serving plate.
  2. Fry diced turkey in oil for 3 minutes, stirring, then add red pepper, ginger and onions. Cook for 5 minutes.
  3. Add mangetout, soy sauce, lemon juice and sugar. Cook for 2 minutes then mix in stock and cook to thicken.
  4. Check seasoning and spoon on top of rice. Garnish with herbs and serve hot.
