Smokey beans with spinach and egg bites hotbox

Ingredients

  • White Onions - diced 120g
  • Leon cooking chorizo - chopped 160g
  • Everyday Favourites baked beans 180g
  • Santa Maria chipotle paste 20g
  • Casa de Mare sea salt 1g
  • Fresh spinach 10g
  • British free range scrambled egg bites - plain 60
  • Farmstead unsmoked rindless streaky bacon 10 slices

Method

  1. Add the diced onions and chopped chorizo into a saucepan and cook until the oil is released then add the beans, chipotle paste and salt. Cook for a further 2-3 minutes then remove from the heat and set to one side.
  2. Grill your streaky bacon until a little crispy.
  3. Place the bean mix into your chosen container and top with spinach, the bacon and plain egg bites. Finish in the oven or microwave.
