Seared scallops with bacon and apple lobster sauce

Juicy scallop with apple and crispy bacon, topped with a lobster sauce

Ingredients

  • Double Cream 100ml
  • Lobster Glace 100g
  • Roeless Scallop Meat 4 pieces
  • Smoked Rindless Streaky Bacon 150g
  • Apple Pink Lady 50g

Method

  1. Pan fry the bacon over a medium heat until crispy and all the juices are released. Remove, leaving the remaining juices in the pan and set aside.
  2. Add the scallops to the pan with the bacon juices, seal and cook on a high heat for 2 minutes.
  3. Remove from the heat and set aside.
  4. Meanwhile, warm the cream in a small saucepan, add the lobster glaze and mix thoroughly. Once combined remove from the heat.
  5. Slice the apple into small matchstick slices.
  6. To plate, place the scallops on a plate, top with the diced bacon and drizzle over the lobster sauce.
  7. To finish, garnish with the apple matchsticks.
