Sawdust Pudding (Portuguese Cream Pudding)

Soft, creamy and dreamy, a layered Portuguese cream pudding, this recipe is made with crushed digestive biscuits, caramel condensed milk sweetened fresh cream, and topped off with biscuits, pecan and hazelnuts.

Ingredients

  • Double Cream 80ml
  • Sweetened Caramel Condensed Milk
  • Digestive Biscuits 60g
  • Pecan Nuts 15g
  • Hazelnuts 10g

Method

  1. Blend the biscuits until they resemble "sawdust".
  2. Whip the cream to stiff peaks and fold the caramel condensed milk into the cream.
  3. Layer up the sawdust and cream.
  4. Garnish with nuts.
