Quinoa pancakes

Ingredients

  • Everyday Favourites plain flour 500g
  • Sun-Pat smooth peanut butter 30g
  • Alpro organic unsweetened soya milk 700ml
  • Three colour quinoa 100g
  • Dr Oetker gluten free baking powder 6g
  • Everyday Favourites ground ginger 4g
  • Fresh lemon juice 15g
  • Everyday Favourites pure Canadian maple syrup 30ml
  • Everyday Favourites ground cinnamon 6g
  • KTC coconut oil 1 tsp

Method

  1. Mix all the ingredients together apart from the coconut oil and set to one side for 10 minutes.
  2. Heat a frying pan and add the coconut oil, laddle in the batter and cook for 1-2 minutes until bubbles form on the surface then turn over and continue to cook on each side - use all the mixture.
  3. Serve warm with a choice of toppings - we recommend fresh berries and maple syrup.
