Philadelphia vegetable frittata

Ingredients

  • Philadelphia Original 3 tbsps
  • 125g Chestnut mushrooms, sliced
  • Spray oil for frying
  • Cooked new potatoes (leftover boiled or baked potatoes are perfect for this), cut into rough chunks 3-4
  • Red pepper, thinly sliced 1
  • Baby spinach, roughly chopped 75g
  • Cherry tomatoes, halved 100g
  • Free-range eggs, beaten 8
  • Courgette, cut in half lengthways and sliced into half moons 1
  • Salt and black pepper to season
  • Crunchy salad leaves to serve
