Organic forest fruit cobbler

Cooking and baking spread 125g
Free range medium egg 1
Frozen blueberries 120g
Gluten free baking powder 4g
Plain flower 125g
Peach slices in juice 400g
Salt 1g
Ground cinnamon 2g
Soft brown sugar 75g


  1. Grease a baking tin well and sprinkle over 20g of the brown sugar.
  2. Mix the remaining sugar, salt, flour and baking powder together. Rub in the cold butter until it resembles breadcrumbs before adding the egg and mixing it into a thick dough.
  3. Spoon portions of dough over the peaches creating a "lid".
  4. Bake in a preheated oven at 160c for approximately 40 minutes or until the fruit is soft and the cobbler is set and golden.
