Ingredients
- Cooking and baking spread 125g
- Free range medium egg 1
- Frozen blueberries 120g
- Gluten free baking powder 4g
- Plain flower 125g
- Peach slices in juice 400g
- Salt 1g
- Ground cinnamon 2g
- Soft brown sugar 75g
Method
- Grease a baking tin well and sprinkle over 20g of the brown sugar.
- Mix the remaining sugar, salt, flour and baking powder together. Rub in the cold butter until it resembles breadcrumbs before adding the egg and mixing it into a thick dough.
- Spoon portions of dough over the peaches creating a "lid".
- Bake in a preheated oven at 160c for approximately 40 minutes or until the fruit is soft and the cobbler is set and golden.
