Ingredients
| Cooking and baking spread | 125g |
| Free range medium egg | 1 |
| Frozen blueberries | 120g |
| Gluten free baking powder | 4g |
| Plain flower | 125g |
| Peach slices in juice | 400g |
| Salt | 1g |
| Ground cinnamon | 2g |
| Soft brown sugar | 75g |
Method
- Grease a baking tin well and sprinkle over 20g of the brown sugar.
- Mix the remaining sugar, salt, flour and baking powder together. Rub in the cold butter until it resembles breadcrumbs before adding the egg and mixing it into a thick dough.
- Spoon portions of dough over the peaches creating a "lid".
- Bake in a preheated oven at 160c for approximately 40 minutes or until the fruit is soft and the cobbler is set and golden.
